This easy pumpkin sourdough discard bread is the perfect fall recipe. It uses up your sourdough discard and canned pumpkin for a tender, flavorful loaf with a subtle tang that balances the warm spices.

  • 1 cup (240g) pumpkin puree
  • 1 cup (240g) sourdough discard
  • 2 large eggs, room temperature
  • 1/2 cup (120ml) melted unsalted butter
  • 1/2 cup (100g) packed brown sugar
  • 1/4 cup (50g) granulated sugar
  • 1 1/2 cups (190g) all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon cinnamon
  • Optional: 1/2 cup (60g) chopped pecans or walnuts
  • Optional: 1/3 cup (50g) chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×5-inch loaf pan with parchment paper, leaving overhang on the long sides.
  2. In a large bowl, whisk together pumpkin puree, sourdough discard, eggs, melted butter, brown sugar, and granulated sugar until smooth.
  3. In a separate medium bowl, whisk together flour, baking soda, baking powder, salt, pumpkin pie spice, and cinnamon. If using nuts or chocolate chips, stir them into the flour mixture.
  4. Pour dry ingredients into wet mixture. Fold gently with a rubber spatula until just combined (a few lumps are okay).
  5. Pour batter into prepared pan and let rest for 15 minutes.
  6. Bake for 50-60 minutes. At 30 minutes, tent with foil if top is browning too quickly. Bread is done when a toothpick inserted in center comes out clean or with a few moist crumbs.
  7. Cool in pan for 10 minutes, then lift out using parchment and transfer to a wire rack. Cool completely before slicing (at least 1 hour).

Notes

Let the batter rest for 15 minutes before baking for a tender crumb. Use room temperature ingredients for best results. Don’t open the oven door during the first 30 minutes of baking. Cool completely before slicing to avoid a gummy texture.
