This one-bowl banana walnut bread is tender, moist, and packed with crunchy walnuts. It’s the perfect simple recipe for using up overripe bananas and delivers incredible flavor with minimal effort.

  • 3 large ripe bananas, mashed (about 1 ½ cups)
  • ½ cup unsalted butter, melted and slightly cooled
  • ¼ cup vegetable oil
  • ¾ cup granulated sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup walnut halves or pieces, roughly chopped

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan with butter or cooking spray, then line it with a strip of parchment paper that hangs over the two long sides.
  2. Peel the bananas and place them in a large mixing bowl. Mash them with a fork until mostly smooth with a few small lumps remaining. Measure out 1 ½ cups of mashed banana.
  3. To the mashed bananas, add the melted butter, vegetable oil, granulated sugar, eggs, and vanilla extract. Stir together with a fork or whisk until well combined.
  4. Sprinkle the flour, baking soda, and salt over the wet mixture. Stir gently with a fork or rubber spatula until just combined. A few streaks of flour are okay.
  5. Add the chopped walnuts to the batter and fold them in gently until evenly distributed.
  6. Scrape the batter into the prepared loaf pan and spread it into an even layer. Tap the pan gently on the counter a few times to release any air bubbles.
  7. Bake for 50-60 minutes. Start checking at 50 minutes by inserting a toothpick into the center of the bread. If it comes out clean or with a few moist crumbs, it’s done.
  8. Let the bread cool in the pan for 10-15 minutes. Then, use the parchment sling to lift it out and transfer it to a wire rack. Let it cool completely before slicing.

Notes

Use really ripe bananas for best sweetness and moisture. Toast walnuts before adding for extra crunch. Don’t overmix the batter to keep the bread tender. Let the bread cool completely before slicing to prevent crumbling.
