Easy No-Churn Salted Caramel Pretzel Ice Cream

This creamy, salty-sweet no-churn ice cream is made without a machine, featuring ribbons of caramel, crunchy pretzels, and a touch of flaky sea salt. It’s the perfect homemade treat for any occasion.

Ingredients

  • 2 cups heavy whipping cream (cold)
  • 1 can (14 ounces) sweetened condensed milk
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 cup caramel sauce
  • 1/2 teaspoon flaky sea salt
  • 1 cup mini pretzels (crushed into small pieces)
  • 1/2 cup whole mini pretzels

Instructions

  1. Chill your mixing bowl and beaters in the freezer for 10-15 minutes (optional but helpful).
  2. Pour the cold heavy cream into the chilled bowl and beat on medium-high speed until stiff peaks form, about 3-5 minutes.
  3. In a separate small bowl, stir together the sweetened condensed milk, vanilla extract, and 1/4 teaspoon salt until smooth.
  4. Pour the condensed milk mixture into the whipped cream and gently fold with a rubber spatula until no white streaks remain.
  5. Crush 1 cup of mini pretzels into small pieces (not dust) using a rolling pin or your hands. Set aside.
  6. Spread about one-third of the cream mixture into a loaf pan. Drizzle with 2 tablespoons of caramel sauce, sprinkle with a pinch of flaky sea salt, and add one-third of the crushed pretzels. Repeat layers two more times, ending with a final layer of cream mixture.
  7. Drizzle the remaining caramel sauce over the top and gently swirl with a knife or skewer. Sprinkle with the remaining flaky sea salt.
  8. Gently press the whole mini pretzels into the top layer.
  9. Press plastic wrap directly onto the surface of the ice cream and freeze for at least 6 hours, preferably overnight.
  10. Before serving, let the ice cream sit at room temperature for 5-10 minutes to soften slightly.

Notes

For best results, use cold heavy cream and whip to stiff peaks. Press plastic wrap directly onto the surface to prevent ice crystals. Let the ice cream soften for 5-10 minutes before serving for easier scooping. The flavors develop even more after a day in the freezer.
