This tangy, rich, and perfectly spicy buffalo chicken dip stays velvety and scoopable from the first bite to the last. It’s the perfect crowd-pleaser for game day, potlucks, or any gathering, ready in just 20 minutes.

Ingredients

Scale
  • 8 oz cream cheese, softened to room temperature
  • 1/2 cup buffalo hot sauce (e.g., Frank’s RedHot Original)
  • 1/2 cup ranch dressing (full-fat recommended)
  • 1/2 cup blue cheese dressing (optional; double ranch if omitted)
  • 2 cups cooked chicken, shredded fine (rotisserie chicken works well)
  • 1 cup sharp cheddar cheese, freshly shredded
  • 1/2 cup mozzarella cheese, freshly shredded
  • 1/4 cup green onions, sliced (for garnish)
  • 1/2 tsp garlic powder (optional)
  • 1/4 tsp smoked paprika (optional)

Instructions

  1. Preheat your oven to 375°F (190°C). Let cream cheese sit out to soften if not already done.
  2. Shred the cooked chicken finely using two forks or a hand mixer on low speed. Set aside.
  3. Grate the cheddar and mozzarella cheeses from a block. Toss together in a bowl.
  4. In a mixing bowl, beat the softened cream cheese with a spatula or hand mixer until smooth and fluffy (about 30 seconds).
  5. Add buffalo hot sauce, ranch dressing, and blue cheese dressing (if using). Stir until fully combined and uniform in color.
  6. Fold in the shredded chicken and about 3/4 of the shredded cheese mixture. Reserve the remaining cheese for topping.
  7. Transfer the mixture to a 9×9-inch baking dish (or similar oven-safe dish) and spread into an even layer.
  8. Top with the remaining shredded cheese, spreading evenly to the edges.
  9. Bake for 15-20 minutes, until bubbly around the edges and lightly golden on top. For a browner top, broil for 1-2 minutes, watching closely.
  10. Let the dip rest for 5 minutes to set slightly.
  11. Garnish with sliced green onions and serve warm with tortilla chips, celery sticks, carrot sticks, or crusty bread.

Notes

For best texture, use room temperature cream cheese and freshly shredded cheese. Avoid pre-shredded cheese as it contains anti-caking agents that prevent smooth melting. If dip looks greasy, you may have used pre-shredded cheese or overheated it; bake at 350°F next time. For a lighter version, use reduced-fat cream cheese and Greek yogurt instead of ranch. To make ahead, assemble dip without baking, cover, and refrigerate up to 24 hours; add 5-10 minutes to baking time. Leftovers can be stored in an airtight container in the refrigerator for up to 4 days. Reheat in oven at 300°F for 10-15 minutes or microwave in 30-second bursts. Not recommended for freezing.
