Instructions

  1. Prepare the chicken: If using rotisserie chicken, remove skin and bones, then shred or dice into bite-sized pieces (about 3 cups). If using raw chicken breasts, season with salt and pepper, bake at 375°F for 25 minutes, let cool, then shred.
  2. Dice the vegetables: Finely dice the celery and red onion into ¼-inch pieces. Halve the grapes lengthwise.
  3. Make the dressing: In a large mixing bowl, combine Greek yogurt, fresh lemon juice, chopped dill, salt, and pepper. Stir until smooth. Taste and adjust salt if needed.
  4. Combine everything: Add shredded chicken, diced celery, minced red onion, and halved grapes to the bowl with the dressing. Fold gently with a spatula until every piece of chicken is coated. Do not overmix.
