  • 8 oz Sharp Cheddar Cheese, grated fresh
  • 4 oz Mild Cheddar Cheese, grated fresh
  • 4 oz Monterey Jack Cheese, grated fresh
  • 4 oz Cream Cheese, softened
  • 1/2 cup Heavy Cream, room temperature
  • 4 oz Roasted Green Chiles, diced and drained
  • 2 cloves Garlic, minced
  • 1 tsp Ground Cumin
  • 1/2 tsp Smoked Paprika
  • 1/2 tsp Salt (or to taste)
  • Black Gel Food Coloring
  • 2 tbsp Water

Instructions

  1. Grate all cheddar and Monterey Jack cheese blocks and place in a large bowl.
  2. In a slow cooker or saucepan, combine softened cream cheese, heavy cream, minced garlic, cumin, and smoked paprika. Heat on low, stirring frequently, until smooth (5-7 minutes).
  3. Gradually add the grated cheeses to the cream mixture, stirring constantly. Continue heating on low until melted and smooth (10 minutes). Do not let it boil.
  4. Fold in the drained roasted green chiles and adjust seasoning with salt if needed.
  5. Mix black gel food coloring with water to create a thick paste and transfer to a squeeze bottle.
  6. Pour warm queso into a serving bowl. Drizzle the black mixture in a spiral pattern from the center outward.
  7. Immediately use a toothpick to drag from the center to the edge and vice versa to create a web pattern.
  8. Serve immediately with tortilla chips, veggie sticks, or crusty bread.

Notes

Use freshly grated cheese rather than pre-shredded to ensure a smooth melt. Keep heat low to prevent the cheese from separating. If the dip thickens too much, add a splash of heavy cream to loosen it.
