Instructions

  1. In a large bowl, beat the softened unsalted butter, granulated sugar, and brown sugar together on medium speed for 3-4 minutes until light, fluffy, and pale.
  2. Add the pumpkin puree, eggs, and vanilla extract. Mix on low speed until just combined, scraping down the sides of the bowl.
  3. In a separate medium bowl, whisk together the all-purpose flour, baking soda, cream of tartar, salt, and pumpkin pie spice.
  4. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until the flour disappears. Do not overmix.
  5. Cover the bowl with plastic wrap and refrigerate the dough for at least 30 minutes (or up to 24 hours).
