A perfectly scaled-down pumpkin pie recipe designed for two people, offering rich, concentrated flavors and a silky custard texture without the waste of a full-sized pie.

Ingredients

Scale
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon salt
  • 2 tablespoons unsalted butter, cold and cubed
  • 2–3 tablespoons ice water
  • 1/2 cup pumpkin puree (100% pure)
  • 1/4 cup heavy cream
  • 1/4 cup milk
  • 2 large eggs, room temperature
  • 1/3 cup granulated sugar
  • 1/4 teaspoon ground cinnamon
  • 1/8 teaspoon ground nutmeg
  • 1/8 teaspoon ground ginger
  • 1/4 teaspoon vanilla extract

Instructions

  1. In a small bowl, mix flour and salt. Cut in cold butter until mixture resembles coarse crumbs. Add ice water one tablespoon at a time until dough comes together. Shape into a disk, wrap, and refrigerate for at least 30 minutes.
  2. Preheat oven to 375°F (190°C). Place a baking sheet on the lower rack to catch drips.
  3. Roll dough into a 6-inch circle on a floured surface. Transfer to a 6-inch pie pan, trim edges, crimp sides, and prick the bottom with a fork.
  4. In a medium bowl, whisk eggs until smooth. Add sugar, cinnamon, nutmeg, ginger, and vanilla; whisk to combine. Stir in pumpkin puree, heavy cream, and milk until smooth.
  5. Pour filling into the prepared crust, ensuring edges are clean.
  6. Bake on the center rack for 35-40 minutes, until edges are set but the center still has a slight jiggle.
  7. Cool on a wire rack for at least 30 minutes before slicing to allow the custard to set.

Notes

Keep crust ingredients cold for flakiness. Ensure eggs are at room temperature for smooth blending. Do not overbake; the center should jiggle slightly as it will firm up while cooling. If crust edges brown too quickly, cover with foil. Pumpkin puree must be 100% pure, not pie mix.
