Quick BBQ Chicken Thighs with Perfect Charred Corn

Juicy, caramelized BBQ chicken thighs and sweet, smoky charred corn come together in under 30 minutes for a perfect weeknight dinner that tastes like a summer cookout.

  • 46 bone-in, skin-on chicken thighs (about 1.5 lbs or 680g)
  • 1/2 cup (120ml) your favorite BBQ sauce
  • 4 ears fresh corn on the cob
  • 2 tablespoons (30ml) olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons (28g) butter, softened
  • 1 lime, juiced
  • 2 tablespoons fresh cilantro, chopped

Instructions

  1. Preheat your grill to high heat (450-500°F / 230-260°C). Clean and oil the grates.
  2. Pat chicken thighs dry. Mix smoked paprika, garlic powder, onion powder, salt, and pepper. Rub mixture all over chicken, getting under the skin if possible. Let sit at room temperature for 10 minutes.
  3. Shuck corn and remove silk. Brush each ear with olive oil and season with a pinch of salt.
  4. Place chicken skin-side down on the hottest part of the grill. Cook for 6-7 minutes without moving. Flip and cook for another 5-6 minutes. During the last 3-4 minutes, brush with BBQ sauce, flipping and brushing both sides. Cook until internal temperature reaches 170°F (77°C).
  5. While chicken cooks, place corn directly on grill grates. Turn every 2-3 minutes until charred on all sides, about 8-10 minutes total.
  6. Remove chicken to a platter and let rest for 5 minutes.
  7. Let corn cool slightly, then cut kernels off the cob. Toss with softened butter, lime juice, and cilantro. Season with additional salt if needed.
  8. Serve chicken thighs with charred corn. Drizzle with remaining BBQ sauce and garnish with extra cilantro if desired.

Notes

Don’t move the chicken too soon; let the skin crisp. Use a two-zone fire if possible. Baste sauce in stages to avoid burning. Let corn cool before cutting to prevent kernels from flying. Start corn about 3-4 minutes after flipping chicken for synchronized finish.
