  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar, packed
  • 1/2 cup pumpkin puree
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 1 and 1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon cinnamon
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C). Place your cast iron skillet inside while it preheats.
  2. In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar. Beat on medium speed for about 2-3 minutes until light and fluffy.
  3. Add the pumpkin puree, egg, and vanilla extract. Mix on low speed until just combined.
  4. In a separate medium bowl, whisk together the flour, baking soda, salt, pumpkin pie spice, and cinnamon.
  5. Gradually add the dry ingredients to the wet ingredients. Mix on low speed until just combined.
  6. Fold in the chocolate chips. Reserve about 2 tablespoons of chocolate chips to press into the top of the dough later.
  7. Carefully remove the hot skillet from the oven. Grease it lightly with butter or non-stick spray.
  8. Press the cookie dough evenly into the skillet.
  9. Press the reserved chocolate chips into the top of the dough.
  10. Bake for 18-22 minutes. The edges should be golden brown and set, but the center should still look slightly soft and underdone.
  11. Remove from the oven and let it cool in the skillet for 10 minutes before serving.

Don’t overmix the dough. Use room temperature ingredients. Don’t overbake; the center should look slightly underdone when you pull it out. Let the skillet cool slightly before serving. For gluten-free, use a 1:1 gluten-free flour blend. For vegan, use vegan butter and a flax egg.
