  • 1 teaspoon Baking Soda
  • 1 teaspoon Salt
  • 2 teaspoons Ground Cinnamon (divided)
  • 1/2 cup Vegetable Oil
  • 3/4 cup Granulated Sugar
  • 2 large Eggs
  • 1 teaspoon Vanilla Extract
  • 2 medium Zucchini (about 2 cups shredded)
  • 1/3 cup Flour (for streusel)
  • 1/4 cup Brown Sugar, packed (for streusel)
  • 1/2 teaspoon Cinnamon (for streusel)
  • 2 tablespoons Butter, cold and cubed (for streusel)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5 inch loaf pan and line the bottom with parchment paper.
  2. Wash and grate the zucchini using a box grater. If the zucchini is wet, squeeze out excess moisture using a paper towel or clean kitchen towel.
  3. In a medium bowl, whisk together the flour, baking soda, salt, and 2 teaspoons of cinnamon.
  4. In a large bowl, whisk the oil, sugar, eggs, and vanilla until smooth and slightly pale.
  5. Pour the dry ingredients into the wet ingredients and fold together with a spatula until just combined. Do not overmix.
  6. Gently fold in the shredded zucchini.
  7. In a small bowl, mix the 1/3 cup flour, brown sugar, cinnamon, and cold cubed butter. Rub the butter into the flour with your fingers or a fork until it resembles coarse sand with pea-sized clumps.
  8. Pour the batter into the prepared loaf pan and spread evenly. Sprinkle the streusel topping over the surface.
  9. Bake for 45 to 50 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
  10. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

Ensure zucchini is squeezed dry to prevent a soggy loaf. Do not overmix the batter to keep the bread tender. For gluten-free, use a 1:1 gluten-free flour blend. For vegan, use flax eggs and coconut oil.
