Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or 9×13 inch baking dish.
  2. Reduce 1 cup of apple cider in a saucepan over medium heat until it thickens to 2-3 tablespoons of syrup. Let cool completely.
  3. Brown 4 tablespoons of butter in a small saucepan until nutty and golden. Pour into a heatproof bowl to cool slightly.
  4. Whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt in a medium bowl.
  5. Cream ½ cup softened butter and sugar in a large bowl until light and fluffy.
  6. Beat in eggs one at a time, then mix in vanilla and the cooled reduced cider.
  7. Gradually add dry ingredients to wet ingredients, mixing just until combined. Fold in the browned butter.
  8. Gently fold in the diced apples.
  9. Pour batter into prepared pan and bake for 35-40 minutes until a toothpick comes out clean.
  10. While cake bakes, whisk ½ cup softened butter, powdered sugar, heavy cream, and vanilla until smooth to make the glaze.
  11. Cool cake in pan for 10 minutes, then turn out onto a wire rack.
  12. Drizzle glaze over the warm cake and sprinkle with sea salt flakes if desired.

Notes

Ensure apple cider is reduced to a syrup to avoid a soggy cake. Do not overmix the batter once flour is added to prevent toughness. Brown butter carefully as it burns quickly. For best texture, serve warm or at room temperature.
