  • 3 pounds ripe but firm pears (about 67 medium pears, Bosc or Bartlett work great), peeled, cored, and cut into ½-inch chunks
  • 2 cups granulated sugar
  • ¼ cup fresh lemon juice (from about 2 lemons)
  • 1 whole vanilla bean (Madagascar Bourbon recommended)
  • 1 cinnamon stick (about 3 inches)
  • Pinch of fine sea salt

Instructions

  1. Prep the pears: Wash, peel, and core the pears. Cut into ½-inch chunks. Toss with lemon juice in a large bowl to prevent browning.
  2. Split the vanilla bean: Slice the vanilla bean lengthwise and scrape out the seeds. Reserve both seeds and pod.
  3. Combine ingredients: In a heavy-bottomed pot, combine pears, sugar, lemon juice, vanilla bean seeds and pod, cinnamon stick, and salt. Let sit for 10-15 minutes to macerate.
  4. Cook the preserves: Place pot over medium heat. Stir until sugar dissolves and mixture comes to a gentle boil (5-7 minutes). Reduce heat to medium-low and simmer uncovered for 35-45 minutes, stirring every 5-7 minutes. Skim off any foam.
  5. Test for doneness: Place a small plate in the freezer. Drop a teaspoon of hot preserves onto the cold plate. If it wrinkles and moves slowly like thick syrup, it’s done. If it runs, cook 5-10 more minutes and test again.
  6. Remove spices: Fish out the cinnamon stick and vanilla bean pod. Let preserves cool in the pot for 5 minutes.
  7. Jar the preserves: Ladle hot preserves into sterilized jars, leaving ¼ inch headspace. Wipe rims clean and screw on lids fingertip-tight.
  8. Process for storage (optional): For long-term storage, process jars in a boiling water bath for 10 minutes. For refrigerator preserves, let cool to room temperature then refrigerate. Let jars sit undisturbed for 12-24 hours to seal.

Don’t walk away from the pot toward the end of cooking. The last 15 minutes require attention to prevent scorching. Use a heavy-bottomed pot for even heat distribution. Trust the process with the sugar—it’s essential for texture and preservation. Prep everything before you start cooking. Use the cold plate test rather than relying on cooking times.
