  • 2 teaspoons pumpkin pie spice

  • ¼ teaspoon salt
  • ½ cup chocolate chips, chopped nuts, dried cranberries, or raisins (optional)

Instructions

  1. Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or lightly grease with cooking spray.
  2. In a medium bowl, combine 2 cups rolled oats, 1 teaspoon baking powder, 2 teaspoons pumpkin pie spice, 1 teaspoon cinnamon, and ¼ teaspoon salt. Whisk until evenly distributed.
  3. In a large bowl, whisk together 1 cup pumpkin puree, 2 eggs, ½ cup milk, ⅓ cup maple syrup, 2 tablespoons melted coconut oil, and 1 teaspoon vanilla extract until smooth and fully combined.
