These Easy Turkey Bacon Ranch Lunchbox Pinwheels are a quick, no-cook solution for busy mornings. Made with a creamy ranch spread, turkey, bacon, and cheese, they’re a delicious and fun lunchbox favorite that kids and adults love.

Ingredients

Scale
  • 4 (8-inch) flour tortillas
  • 8 oz cream cheese, softened
  • 1 tablespoon ranch seasoning mix
  • 12 tablespoons milk
  • 8 slices turkey deli meat
  • 6 slices bacon, cooked and crumbled
  • ½ cup shredded cheddar cheese
  • ½ cup shredded lettuce (optional)

Instructions

  1. Cook the bacon in a small skillet over medium heat until crispy, about 6-8 minutes. Transfer to a paper towel-lined plate to drain and cool, then crumble into small pieces.
  2. In a medium mixing bowl, combine the softened cream cheese, ranch seasoning mix, and 1 tablespoon of milk. Stir until smooth and well combined. Add the second tablespoon of milk if the mixture is too thick.
  3. Lay a flour tortilla flat on a cutting board. Spread a generous, even layer of the ranch cream cheese mixture over the entire surface, leaving a ½-inch border around the edge.
  4. Place 2 slices of turkey over the cream cheese, overlapping slightly. Sprinkle with crumbled bacon, shredded cheddar cheese, and shredded lettuce (if using).
  5. Starting at one end, tightly roll the tortilla into a log, keeping the filling tucked in as you go. Roll as snugly as possible without tearing the tortilla.
  6. Place the rolled tortilla seam-side down on a piece of plastic wrap. Wrap tightly in the plastic wrap, twisting the ends to secure. Repeat with remaining tortillas. Refrigerate for at least 30 minutes, or up to 4 hours.
  7. When ready to serve, unwrap the chilled rolls. Using a sharp serrated knife, slice each roll into 1-inch thick pinwheels. Use a gentle sawing motion to cut cleanly.

Notes

For best results, ensure cream cheese is at room temperature for smooth mixing. Chilling the rolled tortillas is essential for clean slices. To prevent sogginess, spread cream cheese to the edges and pat lettuce dry. Tortillas can be warmed in the microwave for 10 seconds if they crack when rolling.
