These Easy Turkey & Cheese Sushi Roll-Up Lunchbox Bites are a fun, no-cook lunch idea made with turkey, cheddar, cream cheese, and nori wrapped in a tortilla. Ready in 10 minutes, they’re perfect for school lunches, road trips, and snacks.

  • 4 (8-inch) flour tortillas
  • 1620 slices deli turkey breast
  • 8 slices cheddar cheese
  • 4 tablespoons cream cheese, softened
  • 4 nori sheets (sushi seaweed)
  • Optional: thin cucumber strips, avocado slices, shredded carrots, or bell pepper strips
  • Soy sauce or tamari for dipping (optional)

Instructions

  1. Soften the cream cheese: Take cream cheese out of the fridge 15 minutes before starting, or microwave for 10 seconds.
  2. Prepare your workspace: Lay a nori sheet shiny side down on a cutting board. Place a flour tortilla on top of it.
  3. Spread the cream cheese: Using a butter knife, spread a thin, even layer of softened cream cheese over the entire surface of the tortilla.
  4. Layer the turkey: Place 4-5 slices of turkey breast over the cream cheese, overlapping slightly, covering the entire tortilla to the edges.
  5. Add the cheese: Lay 2 slices of cheddar cheese over the turkey. If using add-ins, place them in a thin line about 2 inches from the bottom edge of the tortilla.
  6. Roll it up tightly: Starting from the bottom edge, roll the tortilla and nori together as tightly as possible without tearing. Press down gently to seal the seam.
  7. Wrap and chill (optional but recommended): Wrap the rolled tortilla tightly in plastic wrap or parchment paper. Refrigerate for 10 minutes.
  8. Slice into bites: Unwrap the roll and slice into 1-inch pieces using a sharp knife with a gentle sawing motion. You should get about 6-8 pieces per roll-up.
  9. Pack and serve: Arrange slices in a lunch container with cut sides visible. Add a small container of soy sauce if desired. Best eaten within a few hours.

Notes

For best results, warm tortillas slightly if cold to prevent cracking. Chilling the rolled tortilla for 10 minutes before slicing helps keep slices neat. These are best eaten within 24 hours; nori will soften over time. Do not freeze.
