  • 1 packet (2 ¼ teaspoons) active dry yeast
  • 1 tablespoon brown sugar
  • 2 tablespoons butter, melted
  • 1 teaspoon salt
  • ½ cup baking soda (for water bath)
  • 8 cups water (for boiling)
  • Coarse sea salt or pretzel salt, for topping
  • 2 tablespoons butter, melted (for brushing)
  • 8 ounces sharp cheddar cheese, freshly shredded
  • ¾ cup (180ml) beer (lager or pale ale recommended)
  • 2 tablespoons butter (for dip)
  • 2 tablespoons all-purpose flour (for dip)
  • ¼ cup (60ml) milk
  • 1 teaspoon Dijon mustard
  • ½ teaspoon garlic powder
  • Salt and black pepper, to taste

Instructions

  1. In a large mixing bowl, combine warm water (110°F) with brown sugar. Sprinkle yeast on top and let sit for 5 minutes until foamy.
  2. Add melted butter, salt, and 2 cups of flour. Stir until a shaggy dough forms. Gradually add remaining flour, stirring until combined.
  3. Turn dough onto a lightly floured surface and knead for 4-5 minutes until smooth and elastic.
  4. Place dough in a lightly greased bowl, cover with a kitchen towel, and let rise for 20 minutes until puffed.
  5. While dough rests, bring 8 cups of water to a boil in a large pot. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  6. Carefully add ½ cup baking soda to the boiling water (it will bubble up). Reduce heat to a gentle simmer.
  7. Punch down risen dough and divide into 4 equal pieces. Roll each piece into a 12-inch long rope, 1 inch thick.
  8. Cut each rope into 1-inch pieces to make pretzel bites.
  9. Working in batches of 8-10, drop pretzel bites into simmering baking soda water. Boil for 30 seconds, flip, and boil another 30 seconds. Remove with a slotted spoon and place on prepared baking sheet.
  10. Sprinkle boiled bites generously with coarse sea salt while still wet.
  11. Bake for 12-15 minutes until deep golden brown, rotating pan halfway through.
  12. Brush baked pretzel bites immediately with melted butter.
  13. While pretzels bake, make the beer cheese dip: Melt 2 tablespoons butter in a small saucepan over medium heat. Whisk in 2 tablespoons flour and cook for 1 minute.
  14. Slowly pour in beer while whisking continuously. Cook for 2 minutes until thickened and smooth.
  15. Add milk and whisk until combined. Reduce heat to low.
  16. Add shredded cheddar cheese a handful at a time, whisking until melted before adding more. Stir in Dijon mustard, garlic powder, salt, and pepper.
  17. Keep dip warm on lowest heat, stirring occasionally. Thin with a splash of milk if needed.

Notes

Don’t skip the baking soda bath—it gives pretzels their signature crust. Shred your own cheese for a smooth dip. For a non-alcoholic dip, substitute beer with chicken broth and add a splash of apple cider vinegar. Leftover pretzel bites can be stored at room temperature for up to 2 days; reheat in a 350°F oven for 5 minutes. The dip can be refrigerated for up to 4 days and reheated gently on the stovetop.
