  • 3 cloves garlic, minced

  • 1 can (15 ounces) red enchilada sauce (mild or medium)
  • 1 can (15 ounces) fire-roasted diced tomatoes, undrained
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 cup frozen corn kernels
  • 4 ounces cream cheese, softened and cut into cubes
  • 2 cups cooked, shredded chicken (from a rotisserie chicken)
  • Shredded Mexican blend cheese (for topping, optional)
  • Fresh cilantro, chopped (for topping, optional)
  • Diced avocado (for topping, optional)
  • Tortilla chips or strips (for topping, optional)

Instructions

  1. Prep your ingredients first: dice the onion, mince the garlic, seed and mince the jalapeño if using, and shred the chicken.
  2. Heat the olive oil in a large pot over medium heat. Add the diced onion and cook for 4-5 minutes until soft and translucent.
  3. Add the garlic and jalapeño (if using). Stir constantly for about 30 seconds until fragrant.
  4. Bloom the spices: add cumin, smoked paprika, chili powder, dried oregano, and a pinch of salt and pepper. Stir and cook for 30-60 seconds until fragrant.
  5. Pour in the chicken broth and enchilada sauce. Scrape up any browned bits from the bottom of the pot. Add the undrained fire-roasted tomatoes.
  6. Bring the soup to a gentle boil, then reduce heat to medium-low and simmer uncovered for 10 minutes.
  7. Stir in the black beans, frozen corn, and shredded chicken. Return to a simmer and cook for another 5 minutes.
  8. Reduce heat to low. Add the cubed cream cheese, one piece at a time, stirring gently after each addition until fully melted.
  9. Taste and adjust seasoning with more salt, pepper, or a squeeze of lime juice if needed.
