  • 1.5 lbs (680g) bone-in, skin-on chicken thighs
  • 1/3 cup (110g) honey
  • 1/4 cup (60ml) soy sauce (low-sodium if desired)
  • 45 cloves garlic, minced
  • 2 tablespoons (28g) unsalted butter
  • 1 tablespoon (15ml) olive oil
  • 1/4 cup (60ml) chicken broth
  • Salt and black pepper to taste
  • Optional: fresh parsley or green onions, chopped, and sesame seeds for garnish

Instructions

  1. Preheat your oven to 400°F (200°C). Pat the chicken thighs dry with paper towels and season both sides generously with salt and black pepper.
  2. Heat the olive oil in a large oven-safe skillet over medium-high heat until almost smoking. Place the chicken thighs skin-side down in the skillet (work in batches if needed) and sear undisturbed for 5-6 minutes until the skin is deep golden brown and crispy.
  3. Flip the chicken thighs using tongs and cook for another 2-3 minutes on the other side. Transfer the chicken to a plate and set aside.
  4. Reduce the heat to medium. Add the butter to the skillet. Once melted, add the minced garlic and stir constantly for about 30 seconds until fragrant.
  5. Pour in the honey, soy sauce, and chicken broth. Whisk together, scraping up any browned bits from the bottom of the pan. Let the sauce simmer for 1-2 minutes until it thickens slightly.
  6. Return the chicken thighs to the skillet, skin-side up. Spoon some of the sauce over the tops. Transfer the skillet to the preheated oven.
  7. Bake for 15-20 minutes until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
  8. Remove from the oven and let the chicken rest in the pan for 5 minutes. Spoon the pan sauce over the chicken before serving. Garnish with fresh parsley or green onions and sesame seeds if desired.

Notes

Pat the chicken thighs dry for crispy skin. Don’t move the chicken while searing to develop a good crust. Watch the garlic carefully to avoid burning. Use an instant-read thermometer to ensure the chicken reaches 165°F. For extra caramelization, broil for the last 2 minutes.
