  • 1 3/4 cups (220g) all-purpose flour (spooned and leveled)
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 1/2 teaspoons ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger (optional)
  • 1/2 cup chocolate chips, chopped walnuts, or dried cranberries (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×5-inch loaf pan with parchment paper or grease it well with butter or oil.
  2. In a large mixing bowl, mash the bananas with a fork or potato masher until mostly smooth with a few small lumps.
  3. Add the pumpkin puree, granulated sugar, brown sugar, egg, oil, and vanilla extract. Stir with a wooden spoon until well combined.
  4. Add the flour, baking soda, baking powder, salt, cinnamon, nutmeg, and ginger (if using) directly on top of the wet mixture. Stir gently until just combined; a few streaks of flour are okay. Do not overmix.
  5. Fold in any optional add-ins (chocolate chips, walnuts, or dried cranberries) using a gentle folding motion.
  6. Pour the batter into the prepared loaf pan and spread evenly. Tap the pan gently on the counter a few times to release air bubbles.
  7. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs. If the top browns too quickly, tent loosely with aluminum foil for the last 10-15 minutes.
  8. Let the bread cool in the pan for 10 minutes, then lift it out using the parchment overhang and transfer to a cooling rack. Cool completely before slicing (about 1 hour).
