  • ½ cup (100g) granulated sugar
  • ½ cup (100g) packed brown sugar
  • ⅓ cup (80ml) vegetable oil
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 2 cups (about 1 medium zucchini) shredded zucchini, not squeezed
  • 1 cup (175g) semi-sweet chocolate chips
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • 1 teaspoon cinnamon
  • ½ teaspoon fine sea salt

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×5-inch loaf pan with parchment paper, leaving overhang on the long sides. Lightly spray with non-stick cooking spray.
  2. Wash zucchini, trim ends, and shred using the large holes of a box grater until you have 2 cups. Do not squeeze out the moisture.
  3. In a large mixing bowl, whisk together granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract until smooth and glossy, about 30 seconds.
  4. Fold the shredded zucchini into the wet mixture until evenly distributed.
  5. Add flour, baking soda, baking powder, cinnamon, and salt directly to the bowl. Fold gently with a spatula or wooden spoon just until no streaks of flour remain (15-20 strokes). Do not overmix.
  6. Fold in chocolate chips, reserving about 2 tablespoons for the top.
  7. Pour batter into prepared loaf pan, spreading evenly. Sprinkle reserved chocolate chips on top.
  8. Bake for 50-60 minutes. At 45 minutes, check if top is browning too quickly; tent with foil if needed. Bread is done when a toothpick inserted in the center comes out clean or with a few moist crumbs.
  9. Cool in pan for 15 minutes, then lift out using parchment handles and transfer to a cooling rack. Cool completely before slicing.

Notes

Do not squeeze moisture from the zucchini; it keeps the bread tender. Overmixing the batter will make the bread tough. For best results, use room temperature eggs. The bread tastes even better the next day as flavors meld.
