  • 1/3 cup (40 g) plain breadcrumbs (panko works great)
  • 1 large egg, lightly beaten
  • 1/4 cup (25 g) freshly grated Parmesan cheese
  • 1/4 cup (60 ml) marinara sauce, plus more for serving
  • 2 tablespoons (30 ml) olive oil
  • 1/4 cup (40 g) finely grated onion
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • Extra marinara sauce for serving
  • Fresh basil or parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone mat. If using a mini muffin tin, lightly grease the cups.
  2. Grate the onion. Using a box grater, grate 1/4 cup of onion directly into a large mixing bowl.
  3. Combine the wet ingredients. To the bowl with the grated onion, add the ground turkey, beaten egg, 1/4 cup marinara sauce, and olive oil. Use your hands or a spatula to mix until just combined. Do not overmix.
  4. Add the dry ingredients. Sprinkle the breadcrumbs, Parmesan, minced garlic, oregano, basil, salt, pepper, and red pepper flakes (if using) over the turkey mixture. Gently fold everything together until evenly distributed. The mixture should be moist but hold together when pressed. If too wet, add a tablespoon more breadcrumbs.
  5. Shape the meatballs. Using a cookie scoop or tablespoon, portion the mixture into 24 to 30 mini meatballs, about 1 inch (2.5 cm) in diameter. Roll them gently between your palms to form smooth balls. Place them on the prepared baking sheet, spacing them about an inch apart.
  6. Bake the meatballs. Bake for 12 to 15 minutes, or until cooked through and lightly browned. Internal temperature should reach 165°F (74°C). They should feel firm but springy.
  7. Warm the marinara. While the meatballs bake, warm about 1 cup (240 ml) of marinara sauce in a small saucepan over low heat until gently simmering.
  8. Assemble the lunchbox cups. Once the meatballs are done, let them cool for a couple of minutes. Spoon a little warm marinara into the bottom of each thermos or container. Nestle 4 to 5 meatballs into the sauce. Top with another spoonful of sauce and a sprinkle of fresh basil or parsley.
  9. Cool and pack. Let the assembled cups cool to room temperature before sealing the lids. Refrigerate if packing for the next day.
