  • 1 cup pure maple syrup
  • 3 large eggs, room temperature
  • 1 cup heavy cream
  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon vanilla extract

  • 1 box (15.25 oz) yellow cake mix
  • 1 cup chopped pecans, toasted
  • 1/2 cup packed brown sugar
  • 1 teaspoon ground cinnamon
  • 1/2 cup unsalted butter, melted

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish with butter or non-stick spray.
  2. In a large mixing bowl, whisk together the pumpkin puree, maple syrup, eggs, heavy cream, pumpkin pie spice, vanilla extract, and salt until smooth and well combined.
  3. Pour the pumpkin mixture into the prepared baking dish and spread it evenly with a spatula.
  4. In a small bowl, mix together the chopped pecans, brown sugar, and ground cinnamon until the pecans are evenly coated.
  5. Sprinkle the dry cake mix evenly over the pumpkin layer, covering the entire surface.
  6. Sprinkle the pecan streusel mixture evenly over the cake mix layer.
  7. Drizzle the melted butter evenly over the top, covering as much of the surface as possible.
  8. Bake for 45-50 minutes, or until the top is golden brown and the pumpkin layer is bubbling around the edges. The center should still have a slight jiggle. If the top browns too quickly, tent with aluminum foil.
  9. Let the cake cool on a wire rack for at least 20 minutes before serving. The pumpkin layer will set as it cools.

Toast pecans for 3-4 minutes in a dry skillet before using for best flavor. Don’t overbake; the center should have a slight jiggle. Let cool at least 20 minutes for proper setting. For dairy-free, use full-fat coconut cream and plant-based butter. For gluten-free, use a gluten-free yellow cake mix.
