A simple and delicious side dish featuring roasted delicata squash rings coated in a sticky, caramelized maple glaze with rosemary and garlic. The skin is edible, requiring minimal prep, and the result is a perfect balance of sweet and savory.

Ingredients

Scale
  • 1 medium delicata squash (yields about 8–10 rings per half)
  • 1/4 cup real maple syrup
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon garlic powder
  • 1 teaspoon dried rosemary, crushed
  • 1/2 teaspoon kosher salt (or to taste)
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional, for heat)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash the delicata squash thoroughly. Slice it in half lengthwise and scoop out the seeds and stringy pulp with a large spoon.
  3. Place each half flat side down and slice crosswise into 1/2-inch thick rings.
  4. In a small mixing bowl, whisk together the maple syrup, olive oil, melted butter, garlic powder, dried rosemary, salt, and black pepper until smooth.
  5. Place the squash rings in a large bowl and pour the glaze over them. Toss gently to coat every ring evenly.
  6. Line two baking sheets with parchment paper. Arrange the squash rings in a single layer, ensuring they do not touch to prevent steaming.
  7. Roast in the preheated oven for 20 minutes.
  8. Remove the pans and flip each ring over using tongs.
  9. Return to the oven and roast for another 10-15 minutes, or until the squash is tender when pierced with a fork and the edges are caramelized and slightly crispy.
  10. Remove from the oven and let cool for 5 minutes before serving.

Notes

Do not overcrowd the pan; use two baking sheets if necessary to ensure the squash roasts rather than steams. Flip the rings halfway through cooking for even browning. If the glaze starts burning, cover loosely with foil or lower the oven temperature to 375°F. For a dairy-free version, substitute butter with coconut oil or extra olive oil. Real maple syrup is recommended over imitation syrup for best flavor and caramelization.
