A comforting, make-ahead breakfast casserole featuring day-old bread, savory sausage, and a rich egg custard. Perfect for lazy Sundays or busy mornings, this dish offers a perfect balance of texture and flavor with minimal prep time.

Ingredients

Scale
  • 1 loaf (approx. 24 oz) day-old French bread or sourdough, torn into bite-sized chunks
  • 1 lb breakfast sausage (pork or turkey), browned and drained
  • 12 large eggs, room temperature
  • 2 cups whole milk
  • 1 cup heavy cream
  • 1 teaspoon Dijon mustard
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • Salt and black pepper to taste
  • 2 cups shredded sharp cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons fresh chives, chopped
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13 inch baking dish with butter or non-stick spray.
  2. Tear the day-old bread into roughly 1-inch chunks and spread them evenly into the bottom of the prepared baking dish.
  3. Heat a large skillet over medium-high heat. Cook the breakfast sausage, breaking it up with a wooden spoon, until browned and crispy (8-10 minutes). Drain excess grease and spread over the bread layer.
  4. In a large bowl, whisk together eggs, milk, heavy cream, Dijon mustard, smoked paprika, garlic powder, salt, and pepper until smooth.
  5. Pour the egg mixture evenly over the bread and sausage. Use a spatula to gently press down on the bread to ensure it is fully soaked. Let sit for at least 10 minutes.
  6. Sprinkle shredded cheddar and Parmesan cheese evenly over the top.
  7. Bake for 45-50 minutes until the top is golden brown and puffed, and the center is just set.
  8. Let the casserole rest for 10 minutes before cutting and serving warm with fresh chives and parsley.

Notes

Use day-old bread to prevent sogginess. If using fresh bread, toast it for 5 minutes first. Ensure sausage is well-drained. Let the casserole rest for 10 minutes after baking to allow it to set for cleaner slicing. Can be made ahead and refrigerated overnight; add 5-10 minutes to baking time if baking from cold.
