  • ½ teaspoon salt
  • ¼ cup baking soda (for water bath)
  • 8 cups water (for bath)
  • Coarse sea salt or pretzel salt (for sprinkling)
  • 1 egg yolk, beaten with 1 tablespoon water (for wash)
  • 8 ounces (225g) sharp cheddar cheese, freshly grated
  • ½ cup (120ml) beer (lager or pale ale)
  • 2 ounces (55g) cream cheese, softened
  • 1 tablespoon unsalted butter (for sauce)
  • 1 tablespoon all-purpose flour (for sauce)
  • ¼ cup (60ml) whole milk or half-and-half
  • 1 teaspoon Dijon mustard
  • ½ teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Activate the yeast: In a large mixing bowl, combine warm water (110°F) and sugar. Sprinkle yeast over top and let sit for 5-10 minutes until foamy.
  2. Make the dough: Add melted butter, salt, and 1 cup flour to yeast mixture. Stir until combined. Gradually add remaining flour, ½ cup at a time, until a shaggy dough forms. Turn out onto a lightly floured surface and knead for 5-7 minutes until smooth and elastic.
  3. First rise: Place dough in a lightly greased bowl, cover with a clean kitchen towel, and let rise in a warm spot for about 30 minutes until doubled in size.
  4. Preheat and prepare: Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper. In a large pot, bring 8 cups water to a boil, then carefully add ¼ cup baking soda (it will bubble up).
  5. Shape the bites: Punch down risen dough and turn out onto a lightly floured surface. Divide into 4 equal pieces. Roll each into a 12-inch long rope. Cut each rope into 1-inch pieces (about 10-12 per rope).
  6. The baking soda bath: Drop 6-8 pretzel bites into boiling baking soda water. Boil for 30 seconds, then use a slotted spoon to transfer to prepared baking sheet. Repeat with all bites.
  7. Egg wash and salt: Brush each pretzel bite with egg wash (beaten egg yolk + water), then sprinkle generously with coarse sea salt or pretzel salt.
  8. Bake: Bake for 12-15 minutes until deep golden brown. Let cool on baking sheet for a few minutes.
  9. Make the beer cheese sauce: While pretzels bake, melt 1 tablespoon butter in a small saucepan over medium heat. Whisk in 1 tablespoon flour and cook for 1 minute. Slowly pour in beer, whisking continuously. Add milk or half-and-half and whisk until thickened, about 2-3 minutes.
  10. Add the cheese: Reduce heat to low. Add softened cream cheese and whisk until melted. Gradually add shredded cheddar, a handful at a time, whisking until each addition is melted. Stir in Dijon mustard, garlic powder, and salt and pepper to taste.
  11. Serve immediately: Transfer warm pretzel bites to a serving platter and pour beer cheese sauce into a small bowl for dipping. Serve warm.
