Easy Crockpot Chicken & Stuffing Casserole

A comforting, no-fuss crockpot casserole with tender chicken, creamy sauce, and perfectly seasoned stuffing. Perfect for busy weeknights, this dump-and-go recipe delivers a hearty meal with minimal effort.

  • 1.5 pounds (680 grams) boneless, skinless chicken breasts
  • 1 box (6 ounces or 170 grams) seasoned stuffing mix
  • 1 can (10.5 ounces or 298 grams) cream of chicken soup
  • 1 can (10.5 ounces or 298 grams) cream of mushroom soup
  • 1 cup (240 ml) low-sodium chicken broth
  • 1/2 cup (120 ml) sour cream
  • 1/2 cup (1 stick or 113 grams) unsalted butter, melted
  • Salt and black pepper to taste
  • 1 cup (150 grams) frozen peas and carrots (optional)

Instructions

  1. Place the chicken breasts in the bottom of a 6-quart (or larger) slow cooker in a single layer. Season lightly with salt and pepper.
  2. In a medium bowl, whisk together the cream of chicken soup, cream of mushroom soup, sour cream, and 1/2 cup (120 ml) of the chicken broth until smooth. Pour this mixture evenly over the chicken.
  3. In a separate large bowl, combine the dry stuffing mix with the melted butter and the remaining 1/2 cup (120 ml) of chicken broth. Stir until all the stuffing pieces are evenly moistened (like wet sand).
  4. Sprinkle the prepared stuffing evenly over the soup mixture and chicken. Do not stir. If using frozen peas and carrots, scatter them over the stuffing now.
  5. Cover and cook on LOW for 6-7 hours or on HIGH for 3-4 hours, until the chicken reaches an internal temperature of 165°F (74°C) and shreds easily.
  6. Carefully remove the chicken breasts from the crockpot using tongs. Place on a cutting board and shred with two forks. Return the shredded chicken to the crockpot and gently fold it into the sauce and stuffing mixture.
  7. Let the casserole rest on the WARM setting for 10-15 minutes before serving.

Notes

Don’t lift the lid during cooking. Layer the stuffing on top without stirring. For crispy stuffing, remove the lid and set to HIGH for 15-20 minutes after cooking. Leftovers keep in the refrigerator for up to 4 days or freeze for up to 3 months.
