  • 3 cups cooked chicken, shredded (about 1 rotisserie chicken)
  • 8 oz cream cheese, softened
  • 1 cup ranch dressing
  • 1/2 cup buffalo wing sauce (e.g., Frank’s RedHot)
  • 1 1/2 cups shredded cheddar cheese, divided
  • 1/2 cup crumbled blue cheese (optional)
  • Green onions, sliced (for garnish)

Instructions

  1. Prep the chicken: If using a rotisserie chicken, remove skin and bones, then shred the meat into bite-sized pieces using two forks. You should have about 3 cups. If using canned chicken, drain well and flake with a fork.
  2. Soften the cream cheese: Take cream cheese out of the fridge 30 minutes before starting. Cut into cubes to speed up softening.
  3. Layer in the crockpot: Place softened cream cheese cubes in the bottom of a 4-quart or larger slow cooker. Add shredded chicken on top. Pour in ranch dressing and buffalo wing sauce. Top with 1 cup of shredded cheddar cheese. Do not stir.
  4. Cook: Cover and cook on LOW for 2 to 3 hours, or on HIGH for 1 to 1.5 hours, until cream cheese is fully melted and edges are bubbling.
  5. Stir and finish: Stir well until cream cheese is fully incorporated and chicken is evenly coated. Taste and adjust seasoning (add more buffalo sauce for heat, more ranch for creaminess).
  6. Add topping: Sprinkle remaining 1/2 cup cheddar cheese over the top. Add blue cheese crumbles if using. Cover and cook for another 10-15 minutes until cheese is melted and bubbly.
  7. Garnish and serve: Turn crockpot to ‘Warm’ setting. Just before serving, sprinkle sliced green onions on top. Serve directly from the crockpot to keep warm.

Notes

For best results, use full-fat cream cheese and ranch dressing to avoid a watery or grainy texture. Shred chicken while still warm for easier handling. Do not overcook; switch to ‘Warm’ setting once bubbly to prevent dairy separation. To make ahead, assemble in the crockpot insert (without cooking) and refrigerate up to 24 hours; add 15-20 minutes to cooking time.
