These baked apple cider donuts are crispy on the outside, tender on the inside, and packed with real apple cider flavor. Made without eggs or yeast, they come together in under 30 minutes for a perfect fall treat.

  • 1 ¾ cups all-purpose flour, spooned and leveled
  • ½ cup granulated sugar
  • 6 tablespoons unsalted butter, melted and cooled
  • 1 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • 1 teaspoon vanilla extract
  • ¼ cup milk, room temperature
  • For the coating:
  • ½ cup granulated sugar
  • 2 tablespoons ground cinnamon
  • 4 tablespoons unsalted butter, melted

Instructions

  1. Reduce the apple cider: Pour 1 cup of apple cider into a small saucepan. Bring to a boil over medium-high heat, then reduce heat to medium-low and simmer until reduced to ½ cup, about 10-12 minutes. Set aside to cool slightly.
  2. Preheat oven to 350°F (175°C). Spray a standard 6-cavity donut pan generously with non-stick cooking spray.
  3. Mix dry ingredients: In a large bowl, whisk together flour, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg.
  4. Combine wet ingredients: In a separate bowl, whisk together reduced apple cider, melted butter, milk, and vanilla extract until smooth.
  5. Make the batter: Pour wet ingredients into dry ingredients. Fold gently with a spatula until just combined. Batter will be thick and slightly sticky.
  6. Fill the donut pan: Transfer batter to a piping bag or Ziploc bag with corner snipped. Pipe batter into each cavity, filling about ⅔ full.
  7. Bake for 10-12 minutes, until golden brown and springy to the touch. A toothpick inserted should come out clean or with a few moist crumbs.
  8. Cool in pan for 2-3 minutes, then transfer to a cooling rack.
  9. Make coating: Mix ½ cup sugar and 2 tablespoons cinnamon in a shallow bowl. Melt 4 tablespoons butter in another bowl.
  10. Coat donuts: While still warm, brush each donut all over with melted butter, then immediately dip into cinnamon sugar mixture, turning to coat evenly.
  11. Serve warm. Best eaten within an hour of baking.

Notes

Don’t over-reduce the cider; aim for exactly ½ cup. Use room temperature ingredients for best results. Don’t overmix the batter. The butter bath is essential for a crispy coating. For best texture, serve within an hour of baking.
