  • 4 oz brie cheese, rind removed and cut into 12 small cubes (about 1/2-inch each)
  • 1/4 cup whole berry cranberry sauce
  • 1 large egg, beaten (for egg wash)
  • 1 tablespoon fresh rosemary, finely chopped (optional)
  • Flaky sea salt, for sprinkling
  • 1 tablespoon honey, for drizzling after baking (optional)
  • 1/4 cup chopped pecans or walnuts (optional)
  • Fresh thyme sprigs, for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone mat. If using a muffin tin, lightly grease it with cooking spray.
  2. On a lightly floured surface, unfold the thawed puff pastry sheet. Using a sharp knife or pizza cutter, cut it into 12 equal squares (about 2.5 inches each).
  3. Gently press each square into the cups of your muffin tin, or shape them into little cups on the baking sheet. The edges should come up slightly to hold the filling.
  4. Place one cube of brie in the center of each pastry cup.
  5. Spoon about 1 teaspoon of cranberry sauce over each piece of brie.
  6. Using a pastry brush, lightly brush the edges of the pastry with the beaten egg.
  7. If using, sprinkle rosemary over the tops and add a pinch of flaky sea salt.
  8. Bake for 12-15 minutes, or until the pastry is puffed and golden brown and the brie is melted and bubbly.
  9. Let the bites cool in the pan for 2-3 minutes before transferring to a serving platter.
  10. Serve warm. If desired, drizzle with honey or garnish with fresh thyme sprigs.

Keep the pastry cold for best puffing. Don’t overfill with cranberry sauce to avoid sogginess. Egg wash is key for golden color. Assemble up to 24 hours ahead and refrigerate; brush with egg wash before baking. Reheat in a 350°F oven for 5-7 minutes.
