This easy candy corn popcorn bark is a sweet and salty treat that comes together in just 10 minutes. Perfect for fall gatherings, Halloween parties, or any time you need a quick and addictive snack.

Ingredients

Scale
  • 8 cups popped popcorn (plain, lightly salted)
  • 1 ½ cups candy corn
  • 12 ounces white chocolate chips or melting wafers
  • 1 tablespoon coconut oil or vegetable oil
  • Optional: ½ cup salted pretzels, broken into pieces
  • Optional: ¼ cup fall-themed sprinkles

Instructions

  1. Pop your popcorn (2-3 minutes): If using stovetop, heat 2 tablespoons of oil in a large pot over medium-high heat, add ½ cup kernels, and shake until popping slows. If using microwave, follow package directions. You want about 8 cups of popped popcorn. Spread on a baking sheet and pick out any unpopped kernels.
  2. Prep your workspace (1 minute): Line your baking sheet with parchment paper. Have candy corn measured and ready. If adding pretzels or sprinkles, get those out too.
  3. Melt the white chocolate (2-3 minutes): Put white chocolate chips and coconut oil in a microwave-safe bowl. Microwave in 30-second intervals, stirring well after each one, until smooth and fully melted (about 2 minutes total).
  4. Combine everything (2 minutes): Put popcorn and candy corn in a large mixing bowl. Pour melted white chocolate over the top. Gently fold together with a spatula, trying to coat as much popcorn and candy corn as possible. Don’t stir too hard or you’ll crush the popcorn.
  5. Spread and top (1 minute): Dump the mixture onto the prepared baking sheet. Spread into an even layer, about ½ to ¾ inch thick. If adding pretzels or sprinkles, press them into the top now while the chocolate is still wet.
  6. Let it set (20-30 minutes): Let the bark sit at room temperature until the chocolate is firm. If in a hurry, refrigerate for 10-15 minutes.
  7. Break into pieces (1 minute): Once set, lift the parchment paper off the baking sheet. Break the bark into irregular pieces with your hands. Store in an airtight container.

Notes

Don’t skip the oil when melting white chocolate to prevent seizing. Work fast once chocolate is melted. Use room temperature popcorn to avoid sogginess. Break bark by hand for rustic pieces. Store in an airtight container at room temperature for up to one week. For best texture, make no more than two days ahead. Freezes well for up to three months.
