Ingredients

Scale
  • 12 large eggs
  • 1 pound breakfast sausage
  • 2 cups shredded cheddar cheese
  • 8 large flour tortillas (10-inch diameter)
  • Salt and black pepper to taste
  • 1/2 cup milk or cream (optional)
  • 1 tablespoon butter (optional)

Instructions

  1. Cook the sausage: Place a large non-stick skillet over medium-high heat. Add the sausage and break it apart with a spatula. Cook until browned and cooked through, about 5-6 minutes. Drain off excess grease and transfer to a plate. Wipe out the skillet.
  2. Prepare the eggs: In a mixing bowl, crack 12 eggs. Add salt, pepper, and a splash of milk if using. Whisk until yolks and whites are completely combined and the mixture is pale yellow with small bubbles.
  3. Scramble the eggs: Return the skillet to medium-low heat and add butter if using. Pour in the beaten eggs and let sit for 30 seconds. Push cooked edges toward the center, letting uncooked egg flow to the edges. Cook until eggs are mostly set but still slightly wet and shiny. Fold in the cooked sausage.
  4. Warm the tortillas: Stack tortillas on a plate, cover with a damp paper towel, and microwave for 30-45 seconds until warm and pliable. Alternatively, warm individually in a dry skillet for 15 seconds per side.
  5. Assemble the burritos: Lay a warm tortilla on a clean surface. Spoon about 1/2 cup of the egg-sausage mixture into the center, forming a log shape. Top with about 1/4 cup shredded cheese. Fold the sides inward, then fold the bottom flap up and over the filling, tucking tightly. Roll away from you, keeping snug. Repeat with remaining tortillas and filling.
  6. Wrap and freeze: Let assembled burritos cool completely on a wire rack or baking sheet for about 10 minutes. Wrap each tightly in aluminum foil. Place on a baking sheet in a single layer and freeze for 1-2 hours until solid. Transfer foil-wrapped burritos to a freezer-safe zip-top bag, squeezing out as much air as possible before sealing.

Notes

Scramble eggs slightly underdone (still a bit wet) to prevent rubbery texture after freezing. Drain sausage grease thoroughly to avoid sogginess. Let burritos cool completely before wrapping to prevent condensation. Flash-freeze individually before bagging to prevent sticking. Label bags with date and reheating instructions.
