A quick and easy 15-minute side dish featuring crisp-tender roasted green beans, sweet caramelized garlic, and toasted almonds, finished with butter and lemon juice.

Ingredients

Scale
  • 1 pound green beans, trimmed and washed
  • 1 whole head garlic, cloves separated and peeled
  • 1/2 cup sliced or slivered almonds
  • 3 tablespoons unsalted butter
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 tablespoon fresh lemon juice

Instructions

  1. Preheat oven to 425°F (220°C).
  2. If using frozen green beans, thaw slightly and pat them very dry with paper towels to remove excess moisture. Trim ends of fresh beans.
  3. Place green beans and peeled garlic cloves on a large rimmed baking sheet.
  4. Drizzle with olive oil and sprinkle with salt and pepper. Toss to coat evenly.
  5. Spread beans and garlic in a single layer, ensuring they are not overcrowded.
  6. Roast in the oven for 15-20 minutes, stirring halfway through (around the 10-minute mark) to ensure even browning.
  7. While beans roast, toast almonds in a small skillet over medium heat for 2-3 minutes until golden and fragrant. Set aside.
  8. Remove beans and garlic from the oven when tender-crisp and slightly browned.
  9. Immediately drizzle with melted butter and squeeze fresh lemon juice over the top. Toss gently.
  10. Sprinkle toasted almonds over the beans and serve immediately.

Notes

Ensure green beans are completely dry before roasting to prevent steaming. Do not overcrowd the pan; use two sheets if necessary. Toast almonds separately to prevent burning. Add butter and lemon juice after roasting to preserve texture and flavor.
