A simple, 3-ingredient cookie recipe that creates a crispy exterior with a chewy center. These gluten-free treats are perfect for Halloween parties and require no flour.

Ingredients

Scale
  • 1 cup unsalted butter, softened to room temperature
  • 1 cup granulated sugar
  • 2 cups semi-sweet chocolate chips
  • Large candy eyes (for decoration)

Instructions

  1. Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large mixing bowl, vigorously mix the softened butter and granulated sugar until smooth and slightly lighter in color (about 2-3 minutes).
  3. Fold in the semi-sweet chocolate chips until evenly distributed. If the dough is too soft, chill for 15 minutes.
  4. Drop mounds of dough onto the prepared baking sheets, spacing them 2 inches apart.
  5. Press two candy eyes onto each dough mound while the dough is still soft.
  6. Bake for 10-12 minutes until edges are golden brown and crispy, but centers still look slightly soft.
  7. Let cookies cool on the pan for 5 minutes to set, then transfer to a wire rack to cool completely.

Notes

Ensure butter is softened, not melted, to prevent excessive spreading. Use parchment paper to prevent sticking and burning. Cookies continue to cook on the hot pan after removal, so do not overbake. For a chewier texture, substitute half the granulated sugar with brown sugar.
