A simple yet flavorful side dish featuring tender root vegetables with shatteringly crisp edges, glazed with maple syrup and infused with fresh thyme.

Ingredients

Scale
  • 1.5 lbs Yukon Gold Potatoes, cut into 1-inch cubes
  • 1 lb Carrots, peeled and cut into 1-inch batons or cubes
  • 1 lb Parsnips, peeled and cut into 1-inch batons or cubes
  • 1 lb Sweet Potatoes, cut into 1-inch cubes (optional)
  • 1 medium Red Onion, cut into wedges
  • 3 tbsp Avocado Oil (or other neutral high-heat oil)
  • 2 tbsp Real Maple Syrup
  • 2 tbsp Fresh Thyme Leaves, stripped from stems
  • 2 cloves Garlic, minced
  • 1 tsp Kosher Salt
  • 1/2 tsp Black Pepper, freshly cracked
  • 1 pinch Red Pepper Flakes (optional)

Instructions

  1. Preheat oven to 425°F (220°C). Line a large, heavy-duty rimmed baking sheet with parchment paper.
  2. Peel carrots and parsnips. Cut all vegetables into uniform 1-inch pieces to ensure even cooking. Pat them dry with a towel to remove excess moisture.
  3. In a small bowl, whisk together the avocado oil, maple syrup, minced garlic, fresh thyme leaves, salt, pepper, and red pepper flakes.
  4. Place the cut vegetables in a large mixing bowl. Pour the glaze mixture over the vegetables and toss thoroughly until every piece is evenly coated.
  5. Spread the vegetables onto the prepared baking sheet in a single layer, ensuring they are not crowded to allow for proper air circulation.
  6. Roast in the center rack of the oven for 20 minutes. Remove the pan and flip or stir the vegetables to ensure even browning.
  7. Continue roasting for another 15-25 minutes, or until the vegetables are tender inside and have deeply browned, crispy edges.
  8. Check for doneness by piercing a piece with a fork; it should slide in easily. Remove from oven and let rest for 5 minutes before serving.

Notes

Ensure vegetables are cut uniformly for even cooking. Do not overcrowd the pan, as this causes steaming instead of roasting. If using sweet potatoes, cut them slightly larger as they caramelize faster. For extra crispiness, pat vegetables dry before adding oil. Reheat in an oven or air fryer to restore texture.
