  • 1 cup canned pumpkin puree (100% pure, not pie filling)
  • 8 oz cream cheese, softened to room temperature
  • 1 packet dry ranch seasoning mix
  • 1/2 cup sour cream
  • 1/4 tsp salt (or to taste)
  • 1/4 tsp black pepper (or to taste)
  • Carrots, cut into sticks
  • Celery, cut into sticks
  • Red bell peppers, sliced into strips
  • Cherry tomatoes, whole or halved
  • Cucumber, sliced into rounds or half-moons

Instructions

  1. Wash all vegetables thoroughly. Peel carrots if necessary and cut into 4-inch sticks. Cut celery into similar sticks. Slice bell peppers into strips, removing seeds. Slice cucumber into rounds. Arrange all veggies on a large platter.
  2. Ensure cream cheese is softened to room temperature. If cold, let sit for 15-20 minutes or microwave in 10-second intervals until soft but not melted.
  3. In a medium mixing bowl, combine softened cream cheese and sour cream. Use an electric hand mixer on medium speed to blend until smooth and uniform.
  4. Add pumpkin puree and dry ranch seasoning mix to the bowl. Mix on low speed until just combined. Taste and adjust salt and pepper if needed.
  5. Cover the bowl and refrigerate the dip for at least 30 minutes to allow flavors to meld and texture to thicken.
  6. Give the chilled dip a final stir. Place in the center of the veggie platter. Arrange vegetables around the dip, optionally creating a Halloween-themed design.

Notes

Ensure you use 100% pure pumpkin puree, not pumpkin pie filling, to avoid excess sugar. For a vegan option, use vegan cream cheese and sour cream. Do not freeze the dip as the dairy will separate. The dip can be made up to 2 days in advance.
