Crispy Garlic Butter Chicken Thighs: 10-Min One Pan Meal

Crispy Garlic Butter Chicken Thighs - featured image

A quick, one-pan weeknight dinner featuring bone-in, skin-on chicken thighs rendered until shatteringly crisp and basted in a rich garlic butter sauce. Simple, forgiving, and incredibly flavorful.

Ingredients

  • Bone-in, skin-on chicken thighs
  • Unsalted butter
  • Fresh minced garlic
  • Neutral oil (avocado or grapeseed)
  • Smoked or sweet paprika
  • Dried thyme
  • Salt
  • Black pepper
  • Fresh lemon juice
  • Fresh parsley, chopped

Instructions

  1. Pat chicken thighs completely dry with paper towels and season both sides generously with salt, pepper, paprika, and thyme.
  2. Place a large skillet over medium heat and add neutral oil. Heat for about 2 minutes until the oil shimmers.
  3. Place chicken thighs skin-side down in the pan. Press gently to ensure contact and do not move for 5-6 minutes to render fat and crisp the skin.
  4. Flip the thighs once the skin is golden brown and crispy. Cook the other side for 4-5 minutes until internal temperature reaches 165°F (74°C).
  5. Reduce heat to medium-low. Add butter and minced garlic to the pan. Tilt the pan and spoon the melting butter over the chicken repeatedly for 3 minutes, being careful not to burn the garlic.
  6. Squeeze fresh lemon juice over the chicken and sprinkle with chopped parsley. Remove from heat.
  7. Let the chicken rest for 5 minutes before serving. Spoon the remaining garlic butter sauce over the top.

Notes

Patting the chicken dry is crucial for crispy skin. Do not overcrowd the pan; cook in batches if necessary to ensure proper searing. If using jarred garlic, add it later in the cooking process to prevent burning. For a thicker sauce, mix a teaspoon of cornstarch with cold water and stir into pan juices at the end.
