A quick, no-bake holiday fudge that combines a creamy cream cheese base with a rich chocolate peppermint topping. This easy treat offers the classic snap of peppermint bark with a soft, melt-in-your-mouth texture.

Ingredients

Scale
  • 8 ounces full-fat cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 2 cups confectioners’ sugar, sifted
  • 1 to 2 teaspoons peppermint extract
  • 1 cup white chocolate chips
  • 1/2 cup milk chocolate chips
  • 1/2 cup crushed peppermint candy canes
  • Sea salt flakes, optional for topping

Instructions

  1. Line a 9×9 inch baking pan with parchment paper, leaving an overhang on the sides, and lightly grease the paper.
  2. In a large bowl, beat the softened cream cheese and butter together until smooth.
  3. Add the sifted powdered sugar and peppermint extract. Mix on low speed until combined, then beat on medium speed for one minute until creamy and fluffy.
  4. Transfer the mixture to the prepared pan and press it down evenly to create a flat top.
  5. Refrigerate the base for at least 15 minutes to set.
  6. In a microwave-safe bowl, combine white and milk chocolate chips. Microwave in 30-second intervals, stirring well between each, until mostly melted. Stir until smooth.
  7. Stir half of the crushed peppermint pieces into the melted chocolate.
  8. Remove the pan from the fridge and pour the chocolate mixture over the chilled fudge base. Spread evenly to the edges.
  9. Sprinkle the remaining crushed peppermint pieces and optional sea salt flakes on top.
  10. Refrigerate for at least 30 minutes, or until the chocolate is hard.
  11. Lift the fudge out of the pan using the parchment paper and cut into squares with a sharp knife.

Notes

Ensure cream cheese and butter are at room temperature to avoid lumps. Do not overmix after adding sugar to maintain density. If chocolate is too thick to spread, add a teaspoon of heavy cream or coconut oil. For a shiny finish, let chocolate cool slightly before spreading. Store in the refrigerator as it softens at room temperature.
