A simple, healthy snack made by roasting pumpkin seeds with melted butter, cinnamon, and sugar. These seeds offer a satisfying crunch and cozy autumn flavor, perfect for movie nights or pairing with hot beverages.

Ingredients

Scale
  • 1 cup raw pumpkin seeds (pepitas), shelled
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon neutral oil (optional, e.g., avocado or grapeseed)
  • 2 tablespoons granulated white sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat oven to 325°F (165°C).
  2. If using fresh seeds, rinse thoroughly to remove pumpkin flesh, then pat completely dry with paper towels.
  3. In a small saucepan or microwave-safe bowl, melt the butter and let it cool slightly.
  4. In a large mixing bowl, combine the dried pumpkin seeds, melted butter, and oil (if using). Toss until lightly coated.
  5. Sprinkle sugar, cinnamon, salt, and vanilla over the seeds. Toss vigorously until the mixture resembles wet sand and all seeds are coated.
  6. Line a rimmed baking sheet with parchment paper. Spread seeds in a single layer, ensuring they do not overlap.
  7. Bake for 15-20 minutes, stirring every 5 minutes to ensure even browning. Look for a golden color and nutty aroma.
  8. Remove from oven and let cool completely on the pan for at least 10 minutes to harden. Do not store while warm.

Notes

Ensure seeds are completely dry before roasting to achieve maximum crunch. Stir frequently during baking to prevent burning the sugar. Store in an airtight container at room temperature for up to one week. Avoid refrigeration as moisture will make them chewy.
