  • 1/4 teaspoon black pepper
  • 1/2 cup buffalo hot sauce (e.g., Frank’s RedHot Original)
  • 3 tablespoons unsalted butter, melted
  • 1 tablespoon honey (optional)
  • For serving: ranch or blue cheese dressing, celery sticks, carrot sticks

Instructions

  1. Preheat your oven to 450°F (230°C). Line a large baking sheet with parchment paper or a silicone baking mat.
  2. Prep the cauliflower: Remove leaves and core, cut into bite-sized florets (about golf ball size). Rinse and pat very dry with a clean kitchen towel.
  3. Make the batter: In a large bowl, whisk together flour, garlic powder, onion powder, smoked paprika, salt, and pepper. Slowly pour in milk while whisking until smooth. Batter should coat the back of a spoon.
  4. Coat the cauliflower: Add dry florets to batter and toss gently until evenly coated. Let sit for 5 minutes.
  5. Arrange on baking sheet: Lift each floret out, letting excess batter drip off, and place on prepared sheet. Leave space between pieces.
  6. Bake for 20 minutes: Place on middle rack. Flip each piece at the 10-minute mark for even browning.
  7. Make buffalo sauce: While cauliflower bakes, melt butter in a small saucepan or microwave-safe bowl. Whisk in buffalo hot sauce and honey (if using).
  8. Toss and finish: When cauliflower is done, transfer to a large bowl. Pour sauce over and toss gently with tongs.
  9. Bake again for 5-8 minutes: Return sauced cauliflower to baking sheet (use fresh parchment if needed) and bake until set.
  10. Serve immediately: Transfer to platter, arrange celery and carrot sticks around edges, and serve with ranch or blue cheese dressing.

Notes

Dry cauliflower thoroughly for best crispiness. Don’t skip the second bake after adding sauce—it locks in crunch. For air fryer: cook coated cauliflower at 375°F for 12-15 minutes, toss in sauce, then air fry 3-4 minutes. For gluten-free: use 1:1 gluten-free flour blend. For less spice: reduce buffalo sauce to 1/4 cup and increase butter to 4 tablespoons.
