  • 1 large head of cauliflower, cut into bite-sized florets (about 45 cups)
  • 1 cup all-purpose flour
  • 1 cup buttermilk
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup panko breadcrumbs
  • 1/2 cup buffalo wing sauce
  • 2 tablespoons unsalted butter, melted
  • 1 tablespoon honey (optional)
  • 1/2 cup sour cream
  • 1/4 cup mayonnaise
  • 1/4 cup crumbled blue cheese
  • 1 tablespoon lemon juice
  • 1/4 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper and place a wire rack on top if you have one.
  2. Wash the head of cauliflower and pat it dry thoroughly. Cut it into bite-sized florets, about 1 to 1.5 inches wide. You should have about 4-5 cups of florets.
  3. In one bowl, whisk together the flour, garlic powder, onion powder, smoked paprika, salt, and pepper. In a separate bowl, pour in the buttermilk. Place the panko breadcrumbs in a third shallow bowl.
  4. Working in batches, toss a few florets in the seasoned flour mixture. Shake off any excess, then dip them into the buttermilk, letting the excess drip off. Finally, roll them in the panko breadcrumbs, pressing gently so the crumbs adhere. Place the coated florets on the prepared wire rack or baking sheet. Repeat until all the florets are coated.
  5. Bake for 20-25 minutes, flipping the florets halfway through if you’re not using a wire rack. The cauliflower should be golden brown and crispy to the touch.
  6. While the cauliflower is baking, combine the buffalo wing sauce, melted butter, and honey (if using) in a small saucepan over low heat. Whisk until the butter is fully melted and the sauce is smooth. Keep it warm until the cauliflower is ready.
  7. Once the cauliflower is out of the oven, let it cool for about 2 minutes. Then, transfer the florets to a large bowl and pour the warm buffalo sauce over them. Gently toss until every piece is evenly coated.
  8. While the cauliflower is baking, whisk together the sour cream, mayonnaise, crumbled blue cheese, lemon juice, and garlic powder in a small bowl. Season with salt and pepper to taste. Cover and refrigerate until ready to serve.
  9. Transfer the coated cauliflower to a serving platter and serve hot with the creamy blue cheese dip on the side. Garnish with a sprinkle of chopped chives or green onions if desired.

Notes

For extra crispiness, use a wire rack on the baking sheet. Let the coated florets rest for 5 minutes before baking to help the coating adhere. Serve immediately after tossing in sauce for the best texture. The blue cheese dip can be made up to 3 days in advance and actually improves in flavor.
