A quick and comforting weeknight dinner featuring pillowy refrigerated gnocchi tossed in a rich, nutty brown butter sauce with pumpkin puree, fresh sage, and Parmesan cheese.

  • 1/2 cup (1 stick) unsalted butter
  • 1 cup 100% pure pumpkin puree
  • 1/2 cup heavy cream
  • 1/4 cup fresh sage leaves (or 1 tsp dried sage)
  • 1/2 cup grated Parmesan cheese
  • 1/4 tsp nutmeg
  • Salt and black pepper to taste
  • Reserved pasta water as needed

Instructions

  1. Fill a large pot with salted water and bring to a rolling boil.
  2. Place a large 12-inch skillet over medium heat and add the butter. Melt and cook until it turns golden brown and smells nutty (about 3-4 minutes).
  3. Add sage leaves to the brown butter and cook for 30 seconds until crisp. Reduce heat to low.
  4. Slowly pour in the pumpkin puree and heavy cream, whisking constantly until the sauce is smooth and emulsified (about 2 minutes).
  5. Stir in nutmeg, salt, and pepper.
  6. Add gnocchi to the boiling water and cook according to package directions, usually 2-3 minutes, until they float.
  7. Using a slotted spoon, transfer cooked gnocchi directly to the skillet with the sauce. Reserve about 1/2 cup of pasta water.
  8. Toss gnocchi in the sauce. If too thick, add a splash of reserved pasta water.
  9. Simmer on low heat for 1-2 minutes to meld flavors.
  10. Turn off heat and stir in Parmesan cheese. Serve immediately.

Notes

Use fresh gnocchi for the best texture; dried gnocchi will not yield the same pillowy result. Ensure you use 100% pure pumpkin puree, not pumpkin pie filling. If the sauce breaks, whisk in a tablespoon of cold water or more cream off the heat. Do not overcrowd the pot when boiling gnocchi to prevent mushiness.
