These creamy overnight peanut butter protein oats are a high-protein, grab-and-go breakfast that requires just 5 minutes of prep. Made with simple ingredients like rolled oats, Greek yogurt, peanut butter, and protein powder, they keep you full and satisfied all morning.

Ingredients

Scale
  • ½ cup (50g) rolled oats
  • ½ cup (120ml) milk of choice (whole, almond, or oat milk)
  • ¼ cup (60g) Greek yogurt (plain, unsweetened)
  • 2 tablespoons (32g) creamy peanut butter
  • 1 scoop (about 30g) protein powder (vanilla or unflavored)
  • 1 tablespoon (12g) chia seeds
  • 1 tablespoon (15ml) honey or maple syrup
  • Pinch of salt
  • Optional toppings: sliced banana, extra peanut butter drizzle, dark chocolate chips, cinnamon

Instructions

  1. In a mason jar or mixing bowl, combine ½ cup rolled oats, 1 scoop protein powder, 1 tablespoon chia seeds, and a pinch of salt. Stir with a fork to break up clumps.
  2. In a small bowl or liquid measuring cup, whisk together ½ cup milk, ¼ cup Greek yogurt, 2 tablespoons peanut butter, and 1 tablespoon honey or maple syrup until mostly smooth.
  3. Pour the wet mixture over the dry ingredients in the jar. Stir thoroughly, scraping the bottom and corners.
  4. Seal the jar and refrigerate for at least 6 hours, preferably overnight (8-12 hours).
  5. In the morning, stir the oats. If too thick, add a splash of milk (1-2 tablespoons) and stir to reach desired consistency.
  6. Add toppings like sliced banana, extra peanut butter, cinnamon, or dark chocolate chips. Serve cold or let sit at room temperature for 10 minutes.

Notes

For best texture, mix wet ingredients separately to avoid protein powder clumps. Warm peanut butter for 10 seconds in the microwave for easier mixing. Oats keep in the fridge for up to 5 days; add toppings just before serving. For a vegan version, use plant-based milk, dairy-free yogurt, and maple syrup. For gluten-free, use certified gluten-free oats.
