This creamy overnight peanut butter protein oats recipe is the perfect make-ahead breakfast. With just five minutes of prep, you’ll have a delicious, protein-packed meal ready to grab and go in the morning.

  • ½ cup (50g) rolled oats (old-fashioned oats)
  • ½ cup (120ml) milk of choice (whole milk, oat milk, or almond milk)
  • ¼ cup (60g) plain Greek yogurt
  • 2 tablespoons (32g) creamy peanut butter (natural, no added sugar)
  • 1 scoop (about 30g) vanilla protein powder (whey or plant-based)
  • 1 tablespoon (12g) chia seeds
  • 1 tablespoon (15ml) maple syrup or honey
  • Pinch of sea salt (about ⅛ teaspoon)
  • Optional add-ins: ½ banana sliced, 1 tablespoon cocoa powder, 1 tablespoon flaxseed meal, dark chocolate chips or cacao nibs

Instructions

  1. Combine the wet ingredients first. In your jar or mixing bowl, add ½ cup milk, ¼ cup Greek yogurt, and 2 tablespoons creamy peanut butter. If using maple syrup, add it here. Whisk or stir until the peanut butter is mostly incorporated.
  2. Add the dry ingredients. Pour in ½ cup rolled oats, 1 scoop vanilla protein powder, 1 tablespoon chia seeds, and a pinch of sea salt. Stir vigorously until the protein powder is fully dissolved and there are no dry pockets.
  3. Taste and adjust. Before sealing, taste the mixture. If too thick, add another tablespoon of milk. If not sweet enough, add more maple syrup.
  4. Seal and refrigerate. Put the lid on your jar or container and refrigerate for at least 6 hours, but overnight (8-12 hours) is ideal.
  5. Morning assembly. In the morning, take the jar out of the fridge and give it a good stir. If too thick, stir in 1-2 tablespoons of milk to loosen.
  6. Add toppings. Add sliced banana, a drizzle of extra peanut butter, a sprinkle of cinnamon, or dark chocolate chips as desired.
  7. Enjoy cold or warm. Eat straight from the fridge or microwave for 45-60 seconds, stirring halfway through.

Notes

For best texture, stir the mixture again after 10 minutes in the fridge to redistribute chia seeds. Oats keep in the fridge for up to 5 days, but are best within 2-3 days. For a nut-free version, swap peanut butter with sunflower seed butter or tahini. If skipping protein powder, add an extra tablespoon of peanut butter and an extra tablespoon of chia seeds.
