A simple, high-protein overnight oatmeal that requires just 5 minutes of prep. This creamy, pudding-like breakfast is perfect for meal prep and keeps you full until lunch.

Ingredients

Scale
  • 1/2 cup (40g) Old-Fashioned Rolled Oats
  • 1 scoop (~30g) Vanilla Protein Powder
  • 2 tablespoons (32g) Smooth Peanut Butter
  • 3/4 cup (180ml) Milk of Choice (e.g., oat, almond, dairy)
  • 1 tablespoon (15ml) Honey or Maple Syrup
  • 1 teaspoon (5g) Chia Seeds (optional)
  • 1/4 teaspoon Salt

Instructions

  1. Ensure your mason jar or container is clean and dry.
  2. In the jar, combine the milk, peanut butter, honey, and salt. Vigorously whisk or stir until the peanut butter is fully dissolved and the mixture is a smooth, creamy liquid.
  3. Add the rolled oats, protein powder, and chia seeds (if using) on top of the wet mixture.
  4. Stir everything together thoroughly until no dry pockets remain. The mixture will look thick and chunky.
  5. Seal the jar tightly and refrigerate for at least 4 hours, preferably overnight (8-12 hours).
  6. In the morning, give the oats a good stir. Add a splash of milk if the consistency is too thick. Top with desired toppings and enjoy cold.

Notes

Mix the peanut butter with the milk first to create an emulsion and prevent clumping. Use old-fashioned rolled oats, not instant or steel-cut. If using a very thick protein powder, you may need slightly more milk. Flavors improve after 24 hours.
