  • 1 tablespoon Dijon mustard
  • 1 teaspoon honey or maple syrup

  • 2 ribs celery, finely diced
  • 1 medium apple (Honeycrisp or Fuji), finely diced
  • 2 tablespoons red onion or shallot, finely minced
  • 2 tablespoons fresh dill or parsley, chopped
  • Salt and black pepper to taste
  • 46 large flour tortillas or wraps
  • Optional: lettuce leaves (butter lettuce or romaine)

Instructions

  1. Prep your chicken: Remove skin from rotisserie chicken and shred meat with two forks or hands. Aim for bite-sized pieces, about 3 cups total. If using leftover grilled chicken, dice into 1/2-inch cubes.
  2. Dice your veggies and apple: Finely dice celery, apple, and red onion or shallot into about 1/4-inch pieces. Toss diced apple with a splash of lemon juice if not adding immediately.
  3. Make the dressing: In a large mixing bowl, combine Greek yogurt, Dijon mustard, honey or maple syrup, and apple cider vinegar or pickle brine. Whisk until smooth. Season with salt and pepper to taste.
  4. Combine everything: Add shredded chicken, diced celery, apple, red onion, and fresh herbs to the bowl with dressing. Fold gently until every piece of chicken is coated. Do not overmix.
  5. Season and adjust: Taste and adjust seasoning with more salt, pepper, or vinegar if needed. If too thick, add a tablespoon of water or milk. If too thin, add more yogurt or diced apple.
  6. Chill (optional but recommended): Cover and refrigerate chicken salad for at least 30 minutes to meld flavors.
  7. Assemble the wraps: Lay a tortilla flat. If using lettuce, place a leaf or two in the center, leaving a 2-inch border. Spoon about 1/2 to 3/4 cup of chicken salad onto the lettuce in a log shape.
  8. Roll them up tight: Fold sides inward over filling, then roll from bottom up, tucking filling in as you go. Aim for a tight, even roll. If tortilla cracks, warm in microwave for 10 seconds.
  9. Wrap and store: Wrap each finished wrap tightly in plastic wrap, beeswax wrap, or parchment paper. For lunchboxes, cut each wrap in half diagonally before packing.
  10. Serve or refrigerate: Serve immediately or refrigerate for up to 3 days. The tortillas may soften slightly, but flavor improves.

Notes

Don’t skip the lettuce layer inside the wrap—it prevents sogginess. For best flavor, make the chicken salad a day ahead. If using juicy apples, pat them dry before adding to avoid excess moisture. Season in layers for depth.
