  • 1/4 cup fresh dill, finely chopped
  • 1/2 cup sour cream
  • 2 tablespoons mayonnaise
  • 1 tablespoon white wine vinegar
  • 1 teaspoon salt (plus more for salting cucumbers)
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 cup red onion, thinly sliced (optional)

Instructions

  1. Wash cucumbers and trim ends. Slice into thin rounds (about 1/8-inch thick).
  2. Place sliced cucumbers in a bowl and sprinkle with 1 teaspoon salt. Toss to coat and let sit for 10-15 minutes to draw out water.
  3. Drain cucumbers in a colander and rinse quickly with cold water. Pat very dry with a clean kitchen towel or paper towels.
  4. In a large bowl, whisk together sour cream, mayonnaise, white wine vinegar, chopped dill, and black pepper until smooth. Taste and adjust seasoning.
  5. Add dried cucumber slices and optional red onion to the dressing. Gently fold until evenly coated.
  6. For best flavor, chill in the refrigerator for at least 30 minutes before serving. Garnish with extra dill if desired.

Notes
