A comforting, slow-cooker soup that combines browned ground beef, vegetables, and a rich blend of cheddar and cream cheese for a velvety texture. It’s a quick, easy, and satisfying meal perfect for busy weeknights.

  • 2 pounds 80/20 ground beef
  • 1 large yellow onion, diced
  • 4 cloves garlic, minced
  • 3 medium carrots, peeled and diced
  • 2 stalks celery, diced
  • 2 large russet potatoes, peeled and diced
  • 4 cups low-sodium beef broth
  • 1 can (14.5 oz) diced tomatoes, drained
  • 1.5 cups sharp cheddar cheese, shredded
  • 4 oz cream cheese, softened
  • 1/2 cup heavy cream
  • 1 teaspoon dried thyme
  • 1 teaspoon garlic powder
  • Salt and black pepper to taste

Instructions

  1. Heat a large skillet over medium-high heat. Add ground beef, breaking it up with a wooden spoon. Season with salt and pepper. Cook until fully browned. Drain excess grease if necessary, leaving about a tablespoon. Transfer beef to the slow cooker.
  2. Dice the onion, carrots, celery, and potatoes into small, uniform cubes. Mince the garlic.
  3. Add the diced vegetables and minced garlic to the slow cooker on top of the beef. Pour in the beef broth and drained diced tomatoes. Sprinkle in thyme, garlic powder, salt, and pepper. Stir gently to combine.
  4. Cover and cook on high for 4 hours or low for 6-7 hours, until vegetables are fork-tender.
  5. Turn the slow cooker to ‘Keep Warm’. Cut cream cheese into small cubes. Add cream cheese, shredded cheddar, and heavy cream to the pot.
  6. Stir vigorously with a whisk or large spoon until cheeses are fully melted and the soup is smooth. This may take 5-10 minutes.
  7. Taste and adjust seasoning with more salt or pepper if needed. If too thick, add a splash of broth. Serve hot.

Notes

Browning the beef first adds depth of flavor and prevents a metallic taste. Shred your own cheese to avoid anti-caking agents that cause graininess. Soften cream cheese beforehand to help it melt smoothly. If the soup is too thick, add extra broth; if too thin, cook uncovered to reduce.
