A rich, velvety buffalo chicken dip made with cream cheese, ranch, and hot sauce, baked until bubbly and golden. This easy game-day favorite balances spicy and cool flavors with a perfect creamy texture.

Ingredients

Scale
  • 8 oz (225g) full-fat block-style cream cheese, softened
  • 1 cup (240g) shredded cooked chicken (rotisserie recommended)
  • 1/2 cup (120ml) Frank’s RedHot Sauce
  • 1/2 cup (120ml) creamy full-fat ranch dressing
  • 1 cup (110g) shredded sharp cheddar cheese
  • 1/2 cup (50g) shredded Monterey Jack cheese
  • 1/2 cup (115g) unsalted butter, melted
  • 1/2 cup (115g) blue cheese dressing
  • Green onions, chopped for garnish

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Cut cream cheese into small cubes and let soften at room temperature for 30 minutes or microwave in 15-second intervals until soft but not melted.
  3. In a large bowl, combine softened cream cheese, melted butter, ranch dressing, and hot sauce. Mix with a hand mixer or sturdy spatula until completely smooth with no lumps.
  4. Stir in shredded cheddar and Monterey Jack cheese until evenly distributed.
  5. Gently fold in the shredded chicken, ensuring pieces remain distinct.
  6. Transfer mixture to a 9×9 inch baking dish and spread evenly.
  7. Bake for 20-25 minutes until bubbly around the edges and slightly browned on top. The center should have a slight jiggle.
  8. Optional: Broil for 1-2 minutes for extra browning, watching closely to prevent burning.
  9. Remove from oven and let cool for 5 minutes to allow setting.
  10. Garnish with chopped green onions and serve warm.

Notes

Ensure cream cheese is fully softened to avoid lumps. Use block cheese rather than pre-shredded for better melting. If the dip is too thick after baking, stir in a tablespoon of milk or extra ranch. If too thin, let it cool longer. Leftovers can be stored in the refrigerator for up to 4 days.
