  • 2 large Apples (Honeycrisp, Fuji, or Gala), cored and sliced into thin wedges
  • 1 large Orange (Navel or Cara Cara), sliced into thin rounds
  • 45 Cinnamon Sticks
  • 1 tablespoon Whole Cloves
  • 1 teaspoon Whole Allspice Berries
  • 1/4 cup Pure Maple Syrup (or Brown Sugar), optional
  • Optional: 1-2 Star Anise

Instructions

  1. Prep the Fruit: Wash the apples and orange. Core the apples and slice into thin wedges (about 1/2 inch thick). Slice the orange into thin rounds (about 1/4 inch thick).
  2. Combine in the Slow Cooker: Place the apple slices and orange rounds into the bottom of the slow cooker. Add the cinnamon sticks, whole cloves, and allspice berries. Add star anise if using.
  3. Add the Liquid and Sweetener: Pour the apple cider over the fruit and spices. Drizzle in the maple syrup or brown sugar.
  4. Slow Cook on Low: Put the lid on the slow cooker. Cook on LOW for 4-6 hours. Do not let it boil. (Can cook on HIGH for 2-3 hours in a pinch, but low-and-slow is better.)
  5. Taste and Adjust: After 4 hours, carefully remove the lid and stir. Taste and adjust sweetness or spice level as needed. Add a tiny pinch of salt to brighten flavors if desired.
  6. Strain and Serve: For rustic cider, use a slotted spoon to remove large fruit and spice pieces, then ladle into mugs. For clear cider, pour through a fine-mesh strainer into a pot or punch bowl. Serve warm, garnished with a fresh cinnamon stick or apple slice if desired.

Notes

Don’t overdo the cloves—1 tablespoon is the sweet spot for 8 cups of cider. Cooking on low heat prevents bitterness. This cider tastes even better the next day as flavors meld. For a party, keep the slow cooker on ‘warm’ setting. To make it ahead, cool completely, refrigerate for up to 5 days, and reheat on the stovetop or in the slow cooker.
